Chef Proprietor of Foxcroft and Little Fox in Constantia, Cape Town, this born-and-bred Capetonian has spent 18 years in kitchens. Starting as a pastry commis at 18, he left La Colombe at 26 after five years leading the pastry team to open Foxcroft, which earned Best New Restaurant and two stars at Eat Out. In 2026, Foxcroft moved to Constantia Nek, elevating to fine dining, while sister restaurant Little Fox offers refined small plates. "Having more fun than ever," he says, "cooking unrestricted in both casual and fine dining."
