DUSK
Callan Austin is one of South Africa's most dynamic young culinary talents — co-founder and executive chef of DUSK in Stellenbosch. Opened in 2022, DUSK is an intimate, immersive fine-dining restaurant where each tasting menu tells a story of transformation, sustainability, and self-discovery through seasonal produce. Austin's dishes juxtapose raw and refined, using smoke and fermentation to deepen flavour. In 2024, he launched DAWN, a test kitchen and living laboratory for pushing boundaries. Austin is an articulate advocate for conscious dining, mentoring young chefs, and exploring the intersection of art, design, and cuisine.
