Chefs Warehouse at Maison, Le Grand Domaine Cantina by Chefs Warehouse
Born and bred in Durban, Xavier's gran was his biggest influence. He trained at Christina Martin in Durban and spent the first 8 years of his career there before moving to Cape Town to work at Camphors at Vergelegen. From there he worked in the bush and JHB before joining Singita where he spent 2 years in Kruger and 1 and a half years in Sabi Sand. When Xavier left, he joined Chefs Warehouse at Maison, and has been awarded 1 star by eat out last year and 2 plates from JHP since he started and we will see what the year ahead holds. Besides looking after the restaurant in Franschhoek, Xavieris a co-owner at Le Grand Domaine Cantina by Chefs Warehouse in Stellenbosch.
