Chef Fabio Daniel took an unusual route to the kitchen. After a basketball injury ended his pro career, he traveled the world, working in kitchens across the UK, New Zealand, and Brazil to fund his journeys—and discovered a true passion for food. Settling in South Africa after meeting his wife, he started at the bottom in David Higgs' kitchen at Rust en Vrede. Under Higgs and John Shuttleworth, he rose to Head Chef in August 2017. With Brazilian roots and Italian heritage, Fabio brings flair to contemporary French cuisine, inspired by global travels, Western Cape produce, and his team.
