Driven by the restaurant’s namesake mission, Andrew is committed to mentoring the next generation of culinary talent, fostering a kitchen environment where young chefs can learn and grow. He focuses on creating contemporary, seasonally driven menus that celebrate bold, imaginative flavours. Andrew sources fresh local produce to deliver high-quality comfort food in his open-kitchen setting, to create a relaxed but refined experience. Protégé was recently awarded two stars in the 2025 Eat Out Awards.

La Colombe is always a memorable experience. Driving up to the restaurant always brings up a mix of emotions and nostalgia. Every time I go, the experience has stepped up — service is always welcoming and warm but super professional. Food is always a journey into Chef James's mind.
