A cocktail kitchen in the V&A Waterfront's Rocket Shed, built around "Bar Terroir" — a menu themed around sea, mountains, fynbos, and vineyards. Every cocktail includes at least one local ingredient, from fynbos-infused vermouth to naartjie bitters. The Fynbos Spritz combines Martini Rosso, prosecco, and soda topped with granadilla buchu sorbet.
The space is all dark hues and rustic wood, with bartenders in lab coats mixing behind the bar. Sustainability runs through the entire offering, including a waterless chilling system. This V&A Waterfront spot is an excellent choice for cocktails that taste like Cape Town itself.
